Rita Scarsborough and her husband Alphonso, originally from Pennsylvania, are currently living in Cairo. Alphonso is running his own website design business. They have lived in Cairo for seven years this coming August.

Rita and Alphonso have been homeschooling their daughter Rachel, who is 6 years old, for 1 1/2 years and have a son Joshua who is 9 months old. And if anyone wants to know, they do speak Arabic but not fluently...yet
!(*smile*).

What you need:

  • 3 cups of cooked pasta (the tubular kind or macaroni)
  • 2 cups of milk (low-fat, skimmed, whatever you like)
  • 1 1/2 - 2 cups of melted cheese
    (in Cairo Cheddar is the favorite but any
    cheese will do)
  • 2 TBS of butter
  • 2 TBS of Flour
  • 1 Chicken Bouillon Cube

What you do:

  1. Preheat oven to 375. Cook pasta, drain and place in greased baking dish. Melt butter and stir in flour with a wisk.
  2. While stirring, pour in milk and add the chicken cube stir until the mixture thickens. Pour over the pasta and sprinkle with cheese.
  3. Place in oven to back for 20 minutes or until the cheese
    is melted and slightly golden.
  4. This recipe is full of calories but it is a popular dish in Cairo, Egypt. You can add mushrooms and ground meat if you want to make it a one-dish meal.
  5. Serve with a green salad.
