It's low in fat and high in taste.  If you don't prefer the meats in this recipe you can substitute crumbled soy instead.  Green Giant makes a nice soy crumble product; you can find it in the frozen foods section of your grocery store. This complete breakfast will beat the cereal doldrums and start your day with a smile!

What you need:

  • pizza.jpg (10392 bytes)6 1/2 ounces pizza crust mix
  • 4 pieces of low-fat breakfast sausage (or turkey sausage) -- cooked and crumbled
  • 4 slices fat-free turkey bacon -- cooked and crumbled
  • 1 c fat-free cheddar cheese -- grated
  • 1 c frozen hash browns -- thawed
  • 6 whole egg whites -- slightly beaten
  • 3 tbsps skim milk
  • 1 tsp salt
  • 1/2 tsp black pepper

What you do:

  1. Preheat 375. Prepare pizza crust according to package directions. Sprinkle sausage and bacon over crust.
  2. Sprinkle with hash browns and cheddar cheese. Meanwhile, in a mixing bowl, combine egg whites, milk, salt, and black pepper. Pour over potatoes and cheddar cheese.  Bake for 20 minutes or until crust is golden brown.

Pizza Frita

When I was growing up, my mother made me a treat we called pizza-fritta. She would be making regular Italian bread and would save some dough to pan fry in oil until it was brown. She would take a piece of dough and stretch it out with her fingers [it had holes in it] and looked like a pancake shape. It would puff up light and she browned both sides. Then removed it and drained it and sprinkled sugar on it. My mouth is watering now! You can use any basic bread recipe.

Veggie Pizza Squares & Dip

We received both of these terrific recipes from one of our online cooking club members, "Sunny Mail" It's easy to prepare for any holiday gathering.

Sue's Shrimp Scampi
I've made this about a hundred times and my whole family loves it.  The trick is to keep the fingers away form the shrimp as you are frying them.  The kids and also the hubby find their way onto the platter of cooked, seasoned shrimp and I have to shoo them away, otherwise there wouldn't be any for dinner : ).
