love making this cake, I love eating it too! I have made this over the years for every day
dinner and when guests come over. It never fails. I hope you and yours will enjoy it as
much as I do!
What you need:
- 2 1/4 cups of all-purpose flour
- 2 cups sugar
- 1 teaspoon grated lemon or orange peel
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 cup of dairy sour cream
- 1 cup margarine or butter, softened
- 1 teaspoon vanilla
- 3 eggs
- Glaze
- 1 cup powered sugar
- 1-2 tablespoons of lemon juice
What you do:
- Heat oven to 325 degrees.
- Generously grease (using 1 tablespoon solid shortening) and
lightly flour 12 cup fluted pan. *
- In large bowl, blend all cake ingredients at low speed until
moistened.
- Pour batter into prepared pan. Bake at 325 degrees for 55-60
minutes or until a toothpick inserted in the center comes out clean.
- Cool to lukewarm; invert onto serving plate. Cool
completely.
- In small bowl, blend glaze ingredients until smooth. Spoon
over cake.
* You can also use an 8 inch springform cake pan
