This week's Cookie of the Week is brought to us
by Helen Marie Garcia a very generous and active member of our Families First community.
Thanks Helen for this delicious recipe! Here's a little bit about Helen
I am a mother of two girls, an eighteen years old, who will
be nineteen on December 19th, Amy, and seven year old Allison. I have a wonderful second
husband, Roger, who allows me the privilege of staying home to work. I daycare two four
year-old boys from different families. I have Tommy Monday through Friday, and Eric only
on Tuesday and Thursday. I thoroughly enjoy doing crafts and simple cooking, like the
above recipe with the children. Sometimes I feel my age of forty four, but most of the
time, I feel younger : )
I hope you enjoy the recipe!
What you need:
- 1 - 12 oz. bag of butterscotch chips
- 1 - cup of creamy peanut
butter
- 6 - cups of corn flakes
What you do:
- Melt chips & peanut butter in microwave for 2 1/2
minutes. Stir, and continue another 30 seconds in microwave. Stir again, until most of the
chips are creamy smooth.
- Add corn flakes to mixture, and gently stir in until most
flakes are evenly coated.
- Drop by teaspoons full unto waxed paper. Let set until
hardened, about 1/2 an hour, depending upon how cool your kitchen is!
Bet you can't eat just one!
Susan's Lemon Drop Cookies (Anginetti)
This
recipe comes from a member of our momscooking community, Susan McNeil, who donated this
recipe as part of our cookie collection. She says, "I am
married with three grown children. My hobbies are baking and sewing. This cookie
recipe is my favorite because it isn't too sweet and goes great with coffee or milk. You
could find these cookies up in Syracuse in all the Italian
bakeries, but since moving to Georgia , they are impossible to find."
