 This week's Recipe of the
Week features Sue's Shrimp Scampi. I've made this about a hundred times and my whole
family loves it. The trick is to keep the fingers away form the shrimp as you are
frying them. The kids and also the hubby find their way onto the platter of cooked,
seasoned shrimp and I have to shoo them away, otherwise there wouldn't be any for dinner :
).I like to serve this with seasoned rice. I
put a cup of rice in a pot along with 2 cups of fluid ( I like to use chicken broth), put
the pot top on, bring to a boil using a medium to high heat setting, lower to a simmer
until all the fluid is absorbed by the rice. This should take about 20 minutes and
makes 4 servings. Salt and pepper to taste.
What you need:
1 pound of cleaned shrimp
- 1 cup of Italian seasoned bread crumbs
- Olive or canola oil for the sautéing
- 2 eggs, well beaten
What you do:
- Make sure you rinse the shrimp and it is cleaned. Then
place about 5 or 6 shrimp at a time in the beaten eggs. Heat your frying pan
using a medium to high setting for a minute than add enough oil to coat the bottom of the
pan. You are not deep frying the shrimp but sautéing them.
- Place the first batch of shrimp from the eggs to the bread
crumbs and coat with the Italian bread crumbs. Repeat until you have done this to
all the shrimp. Then place the shrimp about a dozen or so in the frying pan and
allow them to cook about a minute or 2 for each side of the shrimp. You don't want
to leave them in too long, they will get overcooked and become tough.
- Once the shrimp are cooked, place on a dry paper towel on a
plate and allow to drain a bit. Repeat this until all the shrimp are done.
Serve with rice and a green vegetable or salad.
