These rolls are light, fluffy, and easy to make. They are a family tradition in my house ! Watch them disappear! I hope you love these as much as I do !!

What you need:

  • 1 cup of warm of water
  • 1 package of active dry yeast
  • 2 teaspoons sugar
  • 3 cups of bread flour or all purpose flour
    (I like unbleached flour)
  • 1 teaspoon of salt
  • Cornmeal for sprinkling
  • 1 beaten egg with 1 tablespoon of water

Toppings (optional)

  • Grated cheese
  • Sesame seeds
  • Poppy seeds
  • Caraway seeds
  • Coarse or sea salt

What you do:

  1. Place warm water in a large bowl and sprinkle yeast and 1 teaspoon of sugar over. Stir to dissolve and let stand 5-10 minutes or until foamy.
  2. Add 2 cups of flour, salt and remaining sugar, and stir until well mixed.Stir in 1/2 cup flour or enough remaining flour to make a soft dough.
  3. Turn dough out onto a lightly floured surface and knead in enough remaining flour to make a smooth dough. Knead until smooth and elastic, 8 to 10 minutes. Place dough in a greased bowl and turn to coat entire surface of dough. Cover with a clean towel and set aside in a warm, draft free place to rise until twice its size, about a hour.
  4. Grease a baking sheet and sprinkle with the cornmeal. Put aside. Punch dough down and cut into 7-8 pieces and shape slightly into flattened balls and pinch and tuck ends under. Place balls seam side down, on prepared baking sheet in a circle with one ball in the center. Give enough room between the balls of dough for rising. Cover and let rise until almost double in size.
  5. Preheat your oven to 400 degrees Fahrenheit. Brush the tops of the rolls with the egg an water mixture and sprinkle with toppings ( if using
    toppings).
  6. Bake for 10-15 minutes or until golden brown. Remove from baking sheet and cool on wire rack or serve warm. Break circle apart to serve.

This recipe features a terrific "any meal" dish.  Ham and Cheese Bread Bake is a complete meal all in one casserole!   This makes a terrific breakfast or brunch.  It can be made a day in advance. Ham and Cheese Bread Bake is also a quick dinner choice too.
