Sue's Taffy

sueblue.jpg (5692 bytes)This week's Dessert of the Week features taffy.  I remember going to the beach as a kid and eagerly waiting the trip to the candy store.   The best part of the trip was the taffy. With this recipe you don't have to go to the shore for a taste of this sticky, gooey, delicious candy.

If you don't have  a candy thermometer this would be a good time to get one. It's very hard to make candy without one.  You can easily find them in the kitchen section of any department or variety store.

What you need:

  • 1 1/2 cups of sugar
  • 1/8 teaspoon of salt
  • 1/2 cup of corn syrup
  • 1/4 cup of water
  • 2 tablespoons margarine or butter
  • 1/2 teaspoon of vanilla

What you do:

  1. coverButter a large platter or plate.  In a medium heavy saucepan, combine all of the ingredients except for the vanilla.   Cook, stirring constantly until the mixture reaches a hard ball stage ( 255 degrees Fahrenheit).
  2. Remove from heat; stir in the vanilla.   Pour onto the buttered plate. As the candy cools, lift edges toward center.   When cool enough to handle, pull candy with buttered fingertips until it becomes white and stiff.
  3. Pull into a long rope, about 1/2 inch wide.  Cut with clean scissors into about 1 inch pieces while soft and twist, if desired or crack into pieces after it hardens.

    Makes about a pound
